Banana
Cake
Yields: 12
Ingredients
2 cups all-purpose flour
3/4 cup firmly packed brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup choped pecans
1 cup mashed ripe banana (about 4 medium)
1/4 cup honey
1/4 cup vegetable oil
Vegetable cooking spray
Instructions
Rona Waltzer, of Livingston, New Jersey, told us this banana cake is so extra-special
she just had to share it. We're glad she did.
Combine first 5 ingredients in a large bowl; stir well. Add pecans, and toss well. Make a well in center of mixture. Combine banana and next 2 ingredients; stir well. Add to dry ingredients, stirring just until moistened. Spoon batter into a 6-cup Bundt pan coated with cooking spray. Bake at 350 degrees for 55 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes, and remove from pan. Cool completely on a wire rack. Yield: 12 servings (serving size: 1 slice).
